Our garlic journey this year started with a simple goal: to determine which garlic varieties grow best in our specific garden conditions and which ones taste the best in cooking. We planted several types of garlic, closely monitoring their growth and health. For our experiment, we planted the garlic fairly close together and interplanted with lettuces and arugula to mimic real garden conditions. This approach allowed us to maximize our limited garden space and find the best variety for these real-life conditions.

Now that the season’s wrapping up, it’s harvest time. You know it’s time to pull garlic when the first few leaves turn yellow and dry out. Don’t wait too long, though, or it won’t store well. When we dug up the garlic, we were careful not to damage the heads. We got four heads from one clove of Red Russian garlic—pretty wild, right? Montana Zemo also turned out to be a top contender in size and growth.

The last step was drying the garlic, which is crucial before storing it. After leaving it to cure in a cool, dry dark place for about a week to ten days, we trimmed the stalks and roots and checked for any damaged heads. The small and damaged ones are set aside for kitchen use and freezing, while the rest will be going into our cool, dry basement. Proper drying and storage mean we should be enjoying our garlic for months.
